Rempah Udang – also known as Lemper Udang and Pulut Panggang – is a kind of “Asian Tamale”. Spicy dried shrimp is wrapped by fragrant rice cooked with coconut milk, pandan and sugar and then wrapped in a banana leaf. The rice sometimes has blue dye made with a butterfly pea (bunga telan).
Places you can get it in Singapore:
- Kim Choo Kueh Chang (Katong)
spicy, lots of filling
- Galicier Confectionery (Tiong Bahru)
fragrant and complex flavours, also do a chicken version
- Chinta Manis (chain)
- Lina Confectionery (Alexadra Village)
And many more. I’ll work on this list as I go along…
